- 2 ozBourbon
- ¾ ozLemon juice, fresh
- ¾ ozDemerara syrup, 1:1
- 1Egg white, one whole white
- 3 d.Angostura, on the foam
Method
Combine bourbon, lemon, syrup, and egg white in a shaker — no ice yet.
Dry shake for 15 seconds to whip the white.
Add ice and shake again for 12 seconds.
Double-strain into a chilled coupe.
Float three drops of Angostura on the foam and pull a pick through them.
