Whiskey Sour

The dry shake is the only thing standing between you and a flat drink. Do it right and the foam will hold a peak.

Ingredients

  • 2 ozBourbon
  • ¾ ozLemon juice, fresh
  • ¾ ozDemerara syrup, 1:1
  • 1Egg white, one whole white
  • 3 d.Angostura, on the foam

Method

  1. Combine bourbon, lemon, syrup, and egg white in a shaker — no ice yet.

  2. Dry shake for 15 seconds to whip the white.

  3. Add ice and shake again for 12 seconds.

  4. Double-strain into a chilled coupe.

  5. Float three drops of Angostura on the foam and pull a pick through them.
