Tom Collins

Gin, lemon, sugar, and a long pour of soda. The original tall summer drink — the one all the others measured themselves against.

Ingredients

  • 2 ozLondon dry gin
  • 1 ozLemon juice, fresh
  • ½ ozSimple syrup, 1:1
  • Club soda, to top
  • Lemon wheel and brandied cherry, to garnish

Method

  1. Combine gin, lemon juice, and simple syrup in a shaker over cubed ice.

  2. Shake briefly, 6 to 8 seconds — just to chill.

  3. Strain into a Collins glass filled with cubed ice.

  4. Top with cold club soda.

  5. Stir once gently with a bar spoon.

  6. Garnish with a lemon wheel and a brandied cherry on a pick.
