Sazerac

New Orleans, late 1800s. The absinthe rinse is the perfume; the ice in the glass is a sin.

Ingredients

  • 2½ ozRye whiskey
  • ¼ ozDemerara syrup, 1:1
  • 4 d.Peychaud's bitters
  • Absinthe, for the rinse
  • Expressed lemon peel, discarded

Method

  1. Chill a rocks glass with ice while you build the drink in a mixing glass.

  2. Combine rye, syrup, and Peychaud's in the mixing glass over hard ice.

  3. Stir for 30 seconds.

  4. Discard the ice from the rocks glass and rinse with absinthe; tip out the excess.

  5. Strain the drink into the rinsed glass — no ice in service.

  6. Express a lemon peel over the surface and discard.
