Rocks — 30% ABVIngredients
- 2½ ozRye whiskey
- ¼ ozDemerara syrup, 1:1
- 4 d.Peychaud's bitters
- —Absinthe, for the rinse
- —Expressed lemon peel, discarded
Method
Chill a rocks glass with ice while you build the drink in a mixing glass.
Combine rye, syrup, and Peychaud's in the mixing glass over hard ice.
Stir for 30 seconds.
Discard the ice from the rocks glass and rinse with absinthe; tip out the excess.
Strain the drink into the rinsed glass — no ice in service.
Express a lemon peel over the surface and discard.
