Ramos Gin Fizz
Gin, lemon, lime, cream, egg white, sugar, orange flower water, soda. Shaken absurdly long, until the foam rises an inch above the glass and stands. Drunk through a straw, slowly.

- 2 ozLondon dry gin
- ½ ozLemon juice, fresh
- ½ ozLime juice, fresh
- ½ ozHeavy cream
- 1Egg white, one whole white
- 1 ozSimple syrup, 1:1
- 3 d.Orange flower water
- 1 ozSoda water, chilled, to top
Method
Combine gin, both citrus juices, cream, egg white, syrup, and orange flower water in a shaker. No ice. Dry-shake hard for 2 minutes.
Add cracked ice. Shake again for another 2 minutes — your hands will hurt.
Strain into a chilled, empty highball glass.
Slowly pour the soda water down the side; the foam will rise an inch above the rim and hold. Serve with a straw.
