Pisco Sour

Peruvian pisco, fresh lime, simple syrup, egg white. Shaken to a dense white foam, finished with three drops of Angostura. The national drink of Peru, and very nearly of Chile.

Ingredients

  • 2 ozPisco, Peruvian quebranta or acholado
  • ¾ ozLime juice, fresh
  • ¾ ozSimple syrup, 1:1
  • 1Egg white, one whole white
  • 3 d.Angostura aromatic bitters, on the foam

Method

  1. Combine pisco, lime, simple syrup, and egg white in a shaker, no ice. Dry-shake hard for 15 seconds.

  2. Add cracked ice. Shake again for 12 seconds.

  3. Double-strain into a chilled coupe.

  4. Once the foam settles, drop three drops of Angostura on top.
