Piña Colada

Ingredients

  • 2 ozWhite rum
  • 2 ozPineapple juice, fresh-pressed if possible
  • 1½ ozCream of coconut, Coco López, well-stirred
  • ½ ozLime juice, fresh, optional, balances the sweetness
  • Pineapple wedge and brandied cherry, to garnish

Method

  1. Combine rum, pineapple juice, cream of coconut, and lime (if using) in a blender with about 1½ cups of crushed ice.

  2. Blend on high until smooth and thick — 20 to 30 seconds.

  3. Pour into a chilled highball or hurricane glass.

  4. Garnish with a pineapple wedge on the rim and a brandied cherry on a pick.
