- 2 ozWhite rum
- 2 ozPineapple juice, fresh-pressed if possible
- 1½ ozCream of coconut, Coco López, well-stirred
- ½ ozLime juice, fresh, optional, balances the sweetness
- —Pineapple wedge and brandied cherry, to garnish
Method
Combine rum, pineapple juice, cream of coconut, and lime (if using) in a blender with about 1½ cups of crushed ice.
Blend on high until smooth and thick — 20 to 30 seconds.
Pour into a chilled highball or hurricane glass.
Garnish with a pineapple wedge on the rim and a brandied cherry on a pick.
