- 2 ozWhite rum, Havana Club 3 or Bacardí Carta Blanca
- ¾ ozLime juice, fresh
- ½ ozSimple syrup, 1:1
- 8Mint leaves, fresh, plus a bouquet for garnish
- —Club soda, to top
- —Lime wheel, to garnish
Method
Place mint leaves and lime juice in the bottom of a highball. Press gently with a muddler — bruise, do not pulverize. Crushed mint goes bitter.
Add simple syrup and rum.
Fill the glass to the top with crushed ice.
Stir from the bottom up with a long bar spoon to integrate the mint.
Top with a splash of club soda.
Crown with a generous bouquet of mint, slapped between palms first to release oil. Add a lime wheel on the side.
