Mojito

Mint, lime, sugar, white rum, and soda over crushed ice. Cold, herbaceous, and as Cuban as the afternoon shade.

Ingredients

  • 2 ozWhite rum, Havana Club 3 or Bacardí Carta Blanca
  • ¾ ozLime juice, fresh
  • ½ ozSimple syrup, 1:1
  • 8Mint leaves, fresh, plus a bouquet for garnish
  • Club soda, to top
  • Lime wheel, to garnish

Method

  1. Place mint leaves and lime juice in the bottom of a highball. Press gently with a muddler — bruise, do not pulverize. Crushed mint goes bitter.

  2. Add simple syrup and rum.

  3. Fill the glass to the top with crushed ice.

  4. Stir from the bottom up with a long bar spoon to integrate the mint.

  5. Top with a splash of club soda.

  6. Crown with a generous bouquet of mint, slapped between palms first to release oil. Add a lime wheel on the side.
