Dark 'n' Stormy

A column of dark rum poured over a glass of cold ginger beer and ice. Two ingredients, one of them registered to the Bermuda government.

Ingredients

  • 2 ozBlack rum, Gosling's Black Seal for the trademark spec
  • 4 ozGinger beer, spicy and dry — Barritt's or Fever-Tree
  • ½ ozLime juice, fresh, optional but most modern bars include it
  • Lime wedge, to garnish

Method

  1. Fill a highball with cubed ice.

  2. Pour ginger beer over the ice. Add the lime juice if using.

  3. Float the dark rum slowly over the back of a bar spoon so it sits on top, dark over pale — this is the look the name describes.

  4. Garnish with a lime wedge. Stir or layer to taste.
