Dark rum, Campari, pineapple, lime, demerara. The only tropical cocktail to make bitter aperitivo work. Tastes like a Negroni went on holiday.

Ingredients

  • 1½ ozBlackstrap or dark rum, Cruzan Black Strap or Hamilton 86
  • ¾ ozCampari
  • 1½ ozPineapple juice, fresh
  • ½ ozLime juice, fresh
  • ½ ozDemerara syrup, 1:1
  • —Pineapple wedge and cherry

Method

  1. Combine all liquid ingredients in a shaker with cracked ice.

  2. Shake hard for 12 seconds.

  3. Strain into a rocks glass filled with crushed ice.

  4. Spear a pineapple wedge and cherry across the rim.
