Ingredients

  • 1 ozLondon dry gin
  • ½ ozLemon juice, fresh
  • ½ ozSimple syrup, 1:1
  • 3 ozChampagne or dry sparkling wine, cold, freshly opened
  • Lemon twist, to garnish

Method

  1. Chill a flute in the freezer.

  2. Combine gin, lemon juice, and simple syrup in a shaker over cubed ice.

  3. Shake briskly for 8 to 10 seconds.

  4. Double-strain into the chilled flute.

  5. Top with cold Champagne, poured slowly down the side to keep the bubbles.

  6. Garnish with a long, thin lemon twist.
