Gin, raspberry, lemon, egg white. Dry-shaken and wet-shaken until the foam is thick enough to hold a raspberry on the surface. Pale pink. Properly old.

Ingredients

  • 2 ozLondon dry gin
  • ½ ozLemon juice, fresh
  • ½ ozRaspberry syrup, or 4 fresh raspberries muddled with simple
  • ½ ozDry vermouth
  • 1Egg white, one whole white
  • Raspberry on a pick

Method

  1. Combine all ingredients in a shaker with no ice. Dry-shake hard for 15 seconds to emulsify the egg white.

  2. Add cracked ice. Shake again for 12 seconds.

  3. Double-strain into a chilled coupe.

  4. Wait for the foam to set, then balance a raspberry on top.
