Gin, raspberry, lemon, egg white. Dry-shaken and wet-shaken until the foam is thick enough to hold a raspberry on the surface. Pale pink. Properly old.

- 2 ozLondon dry gin
- ½ ozLemon juice, fresh
- ½ ozRaspberry syrup, or 4 fresh raspberries muddled with simple
- ½ ozDry vermouth
- 1Egg white, one whole white
- —Raspberry on a pick
Method
Combine all ingredients in a shaker with no ice. Dry-shake hard for 15 seconds to emulsify the egg white.
Add cracked ice. Shake again for 12 seconds.
Double-strain into a chilled coupe.
Wait for the foam to set, then balance a raspberry on top.
