Caipirinha

Lime, sugar, cachaça, and ice — muddled in the glass. Brazil's national cocktail and the cleanest expression of its national spirit.

Ingredients

  • 2 ozCachaça, Avuá, Novo Fogo, or Leblon
  • ½Lime, cut into 6 wedges
  • 2 tspWhite or turbinado sugar

Method

  1. Place the lime wedges and sugar in a sturdy rocks glass.

  2. Muddle firmly for 15 to 20 seconds — press the limes to release the juice and dissolve the sugar against the peel oil.

  3. Fill the glass with cubed or crushed ice.

  4. Pour the cachaça directly over the top.

  5. Stir from the bottom up with a bar spoon. Drink in the glass — limes stay.
