Ingredients

  • 3 ozProsecco, dry, cold, freshly opened
  • 2 ozAperol
  • 1 ozClub soda, or sparkling water
  • Orange slice, to garnish
  • Large green olive, to garnish, Castelvetrano if you have one

Method

  1. Fill a large wine glass or rocks glass to the top with ice. Generosity here is the difference between a spritz and a watery cocktail.

  2. Pour Prosecco first to keep it lively.

  3. Add Aperol — watch the colors layer for a moment before they merge.

  4. Top with a splash of club soda.

  5. Stir gently once with a bar spoon.

  6. Garnish with an orange slice and an olive on a pick. Drink before the bubbles fade.
